My name is Jillian. I like Banana Bread.

Banana Bread

3/4 cup sugar
2 eggs
1/3 cup milk
2 cups all purpose flour
1 tsp. baking soda
1/2 cup margarine or butter, softened
1 cup mashed ripe bananas (2 medium)
1 tsp. vanilla
1/2 cup chopped nuts (optional)
1/2 tsp salt

Variation: Applesauce bread- substitute 1 cup apple sauce for bananas and add 3/4 tsp cinnamon with flour.

Heat oven to 350 degrees F. Grease bottom only of 9X5 or 8X4 inch loaf pan. In large bowl beat sugar and margarine until light and fluffy. Beat in eggs. Add bananas, milk, and vanilla; blend well. In small bowl combine flour, nuts, baking soda and salt. Mix well. Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan. Bake for 50-60 minutes or until a toothpick inserted in the middle comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Wrap tightly and store in refrigerator.
