Coconut Cornflake Cookies
1/2 cup butter
1 cup packed brown sugar
1 egg
1/3 cup of milk
1 cup coconut
1+ 1/2 cups of cornflakes
1 + 1/2 tsp. vanilla
1/2 tsp. salt
1/4 tsp. baking powder
1 + 1/2 cups sifted flour
Cream butter, add sugar gradually, stirring constantly. Add well beaten egg, milk, cornflakes, coconut, and vanilla. Mix dry ingredients and add to first mixture. Drop from teaspoon onto well greased baking sheet about 3 inches apart. Bake in a 400 degree oven for about 15 minutes.
